 Peaches and Cream Belgian Waffles

Ingredients

Waffles:

2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, separated
1-1/2 cups whole milk
1 cup butter, melted
1 teaspoon vanilla extract

Peaches and Cream:

2 T brown sugar1 tsp cinnamon 1/2 tsp Vanilla1 T butter1 can peach slices, or two sliced ripe peaches1 Cup heavy whipping cream2 T sugar


Directions

Peaches and Cream:
1. Toss sliced peaches in the sugar, cinnamon, and vanilla. Heat a skillet with butter over medium-high heat. Fry peaches evenly until warm and slightly crispy.

2. Beat heavy cream and sugar until soft peaks form
Waffles:

  • 1. In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter.

  • 2. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Top with peaches and cream and syrup if desired. Enjoy!
