Apple Cranberry Dutch Baby



Well here is a Saturday morning delight. Fluffy, sweet, eggy, and beautiful. Dutch babies are like elephant ears, but without the guilt which deep-fried food brings. Light and fluffy with enough fruit and protein to get you going, but enough sweet goodness to put a smile on your face.
 I was curious why it's called a "Dutch baby" so I looked on Wikipedia. Here's a quote,
"According to Sunset magazine,[7] Dutch babies were introduced in the first half of the 1900s at Manca's Cafe, a family-run restaurant that was located in SeattleWashington and that was owned by Victor Manca.[8] While these pancakes are derived from the German pancake dish, it is said that the name Dutch baby was coined by one of Victor Manca's daughters, where "Dutch" perhaps was her corruption of the German autonym deutsch. Manca's Cafe claimed that it owned the trademark for Dutch babies in 1942." -Wikipedia

Apple Cranberry Dutch Baby

Ingredients: 



Butter or oil for pan
5 Eggs
3/4 C Milk
3/4 C Flour 
1 T Vanilla 
2 T Sugar
1/8 tsp Salt
1 Honeycrisp Apple, sliced* 
A handful of Cranberries (Halve the bigger ones)
1 tsp Cinnamon 
Powdered Sugar for dusting
*You may replace apples and cranberries with any fruit or topping you like



Directions:


1. Preheat oven to 425 degrees
2. Add all ingredients (except oil/butter, fruit, and powdered sugar) to a blender or large food processor. Blend on high speed until smooth. Set aside.

3. Thinly slice apples and place in a mixing bowl
Add additional cinnamon if desired and toss to coat.
4. Slice cranberries in half and set aside with apples.
5. Heat a cast-iron skillet over medium-high heat
with butter or oil to coat.
6. Once oil/butter is hot, turn off heat and pour the batter into the skillet.
7. Spread out apple slices and cranberries on top of the batter.
8. Transfer skillet carefully to the preheated oven and
Bake 18-25 minutes or until golden brown and puffy
Remove from oven and dust with confectioners sugar or top with cool whip, ice cream, syrup, or topping of your choice. 
Serve immediately and enjoy!
